84e2963f8e Move /src to /subprojects 
This will facilitate breaking up Nix into multiple packages for each
component with Meson.

c7ec33605e Meson misc things 
Meson-ify a few things, scripts, completions, etc. Should make our Meson
build complete except for docs.
